I made foot-long corn dogs 100% from scratch
Using lean beef, lean pork, and beef fat I made footlong, skinless hot dogs from scratch. Grind, season, stuff, cure, smoke, and cook to temperature. The meat gets stuffed into cellulose casings, but the casings are ultimately removed. Then I took those dogs and dipped 'em in cornmeal batter before deep-frying to golden deliciousness. Also pictured is a honey mustard dipping sauce that appears almost completely white in this photo for some reason.
