Ingredients 4 hot dogs 4 hot dog buns 2 cups shredded cheddar or cheddar-Monterey Jack cheese 4 tablespoons softened butter Mustard and ketchup, for serving Optional: diced onions, relish, or jalapeños Directions Heat a nonstick skillet or griddle over medium heat. Slice each hot dog lengthwise, but don't cut completely through. Open it so it lays flat. Cook the hot dogs for about 2–3 minutes per side, until browned. Set aside. Flatten each bun gently with a rolling pin and butter the outside. Place the bun butter-side down in the skillet. Sprinkle cheese over the inside. Put the cooked hot dog on top of the cheese and add a little more cheese. Cover the skillet for a minute or two so the cheese melts.
